1 tsp Chinese five-spice powder
1 tbsp Sweet sherry
1 crushed Garlic cloves
8 Chicken thighs
1 tbsp Corn oil
1 Red chili
3½ oz/100 g, halved Baby corn
8 sliced Scallion
1 cup Bean sprouts

Clear honey is often added to Chinese recipes for sweetness. It combines well with the saltiness of the soy sauce.

Mix together the honey, soy sauce, Chinese five-spice powder, sherry, and garlic in a large bowl.

Using a sharp knife, make 3 slashes in the skin of each chicken thigh. Brush the honey and soy marinade over the chicken thighs, then cover and leave to stand for at least 30 minutes.

Heat the oil in a large preheated wok. Add the chicken and cook over fairly high heat for 12-15 minutes, until the chicken browns and the skin begins to crispen. Remove the chicken with a slotted spoon and keep warm until required.

Using a sharp knife, seed and very finely chop the chile.

Add the chile, corn cobs, scallions, and bean sprouts to the wok and stir-fry for 5 minutes.

Return the chicken to the wok and mix all of the ingredients together until completely heated through. Transfer to serving plates and serve immediately.
