1 lb/450 g boneless, skinless Chicken breasts
2 tbsp Corn oil
1 crushed Garlic cloves
1 tbsp seeds Cumin
1 tbsp, grated Fresh ginger root
1 seeded and sliced Red chili
1 red, seeded and sliced Bell pepper
1 green, seeded and sliced Bell pepper
1 yellow, seeded and sliced Bell pepper
2⁄3 g cup Bean sprouts
12 oz/350 g Bok choy or other green leaves
2 tbsp sweet Chile sauce
3 tbsp Light soy sauce
deep-fried crispy ginger, to garnish (see Cook’s Tip)

Cumin seeds are more frequently associated with Indian cooking, but they are used in this Chinese recipe for their earthy flavor.

Using a sharp knife, slice the chicken breasts into thin strips.

Heat the oil in a large preheated wok.

Add the chicken to the wok and stir-fry for 5 minutes.

Add the garlic, cumin seeds, ginger, and chili to the wok, stirring to mix.

Add all the bell peppers to the wok and stir-fry for an additional 5 minutes.

Toss in the bean sprouts and bok choy together with the sweet chile sauce
and soy sauce and continue to cook until the bok choy leaves start to wilt.

Transfer to warm serving bowls and garnish with deep-fried ginger (see Cook's Tip).

COOK'S TIP

To make the deep-fried ginger garnish, peel and thinly slice a large piece of ginger root. Carefully lower the slices of ginger into a wok or small pan of hot oil and cook for 30 seconds. Transfer to paper towels and leave to drain thoroughly.
