1 tbsp Corn oil
8 skinless, boneless thighs, cut into long, thin strips Chicken
1 small, sliced thinly Red chili
4 sliced thinly Scallions
4 tbsp smooth or crunchy Peanut butter
1 Finely grated rind and juice Lime
GARNISH
1 fresh Fresh red chili
1 tassel Scallion
boiled, to serve Rice

This tasty dish combines the flavors of lime, peanut, coconut, and chile, You’ll find coconut cream in most supermarkets or delicatessens.

Pour the chicken stock into a measuring pitcher or small bowl. Crumble the coconut cream into the chicken stock and stir the mixture until the coconut cream dissolves.

Heat the oil in a preheated wok or large heavy skillet.

Add the chicken strips and cook, stirring, until the chicken turns a golden color.

Stir in the chopped red chili and scallion and cook gently for a few more minutes.

Add the peanut butter, coconut cream and chicken stock mixture, lime rind and lime juice and simmer, uncovered, for 5 minutes, stirring frequently to prevent the mixture sticking to the base of the wok or pan.

Transfer the chile coconut chicken to a warm serving dish, then garnish with the red chili and scallion tassel and serve with boiled rice.
