½ tsp Sugar
1 tbsp light Soy sauce
1 tsp Rice wine or dry sherry
2 tsp Cornstarch
4-6 dried soaked in warm water Chinese mushrooms
1 tbsp, finely shredded Fresh ginger root
Salt and pepper
a few drops of Sesame oil
leaves, to garnish Fresh cilantro

Dried Chinese mushrooms (shiitake) should be used for this dish otherwise use black rather than white fresh mushrooms. Let’s start making Chinese style yummy and easy chicken recipe.

Using a sharp knife or meat cleaver, cut the chicken into small bite-sized pieces and place in a bowl.

Add the sugar, light soy sauce, wine, and cornstarch to the chicken, then toss to coat and leave to marinate for 25-30 minutes.

Drain the mushrooms and dry on absorbent paper towels. Slice the mushrooms into thin shreds, discarding any hard pieces of stem.

Place the chicken pieces on a heatproof dish that will fit inside a bamboo steamer. Arrange the mushroom slices and ginger shreds on top of the chicken and sprinkle with salt, pepper, and sesame oil.

Place the dish on the rack inside a hot steamer or on a rack in a wok filled with hot water, then steam over high heat for 20 minutes.

Serve hot, garnished with cilantro leaves.

COOK'S TIP

Do not throw away the soaking water from the dried Chinese mushrooms. It is very useful, as it can be added to soups and stocks to give extra flavor.
