Brussels Sprouts

Brussels sprouts are a member of the cabbage family and resemble tiny cabbage heads. Many rows of sprouts grow on a single long stalk. The smaller sprouts are always more tender. Buy small bright green sprouts with compact heads. Brussels sprouts are only eaten cooked and they also freeze well. When stored longer than 3-4 days Brussels sprouts develop a strong flavor. They are a good source of vitamin A and C and are rich in iron and potassium.
