Make the dressing first. Whisk ingredients in a bowl and let rest for a quarter of an hour while preparing the rice.
Reconstitute dried tomatoes and chop to desired size.
Flake rice with a fork and add all other ingredients except fresh coriander or parsley.
Add the dressing and mix until well blended. Correct seasoning.
Sprinkle in the chopped up greens and mix once more.
