  • 1/3 cup toasted pine nuts
  • 4 scallions, minced
  • Sea salt and freshly ground pepper
  • 3 unripe apricots or red plums, seeded and cut into small cubes
  • 1 bunch of fresh coriander  or parsley, chopped up
  • #For The Dressing#
  • 6 sun dried tomato halves
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 large clove garlic, minced
  • 1 teaspoon chili  powder or flakes
  • Sea salt and freshly ground pepper

Instructions

  • #Simple, easy, and tasty. The dominating taste of sun-dried tomatoes and the spices in the dressing - what a great combo with the mellow taste of rice. I love the tart fruits tossed into rice or pasta salads. Choose unripe apricots, plums, peaches or mangoes. Serve this salad slightly warm accompanied by a big bowl of green salad - a gorgeous idea for a summer dinner around the table with family. And how about sipping a glass of chilled white wine with your dinner? Cheers!# Make the dressing first. Whisk ingredients in a bowl and let rest for a quarter of an hour while preparing the rice.
  • Reconstitute dried tomatoes and chop to desired size.
  • Flake rice with a fork and add all other ingredients except fresh coriander or parsley.
  • Add the dressing and mix until well blended. Correct seasoning.
  • Sprinkle in the chopped up greens and mix once more.
