Ingredients
1 oz (25 g) soft butter
1 large slice brown bread
2 smoked trout fillets
1 egg
1 teaspoon single cream
Salt and pepper
A little chopped fresh parsley
Instructions
Spread some butter on the bread and top with the trout fillets.
Beat the egg with the cream, salt, and pepper.
Melt, the remaining butter in a pan and scramble the egg mixture over a low heat.
Spoon onto the trout and sprinkle with parsley.
