Ingredients
  

  • 1 oz (25 g) soft butter
  • 1 large slice brown bread
  • 2 smoked trout fillets
  • 1 egg
  • 1 teaspoon single cream
  • Salt and pepper
  • A little chopped fresh parsley

Instructions
 

  • Spread some butter on the bread and top with the trout fillets.
  • Beat the egg with the cream, salt, and pepper.
  • Melt, the remaining butter in a pan and scramble the egg mixture over a low heat.
  • Spoon onto the trout and sprinkle with parsley.
