Ingredients
8oz (225g) cottage cheese
3 tablespoons double cream
1 piece preserved stem ginger
3 tablespoons honey
1 oz (25 g) cut mixed peel
Instructions
Sieve the cottage cheese into a bowl.
Lightly whip the cream and fold into the cheese.
Finely dice the ginger and stir into the mixture, then stir in the honey.
Chill the cottage cheese in the refrigerator. Serve garnished with cut mixed peel.
