Ingredients
  

  • 8oz (225g) cottage cheese
  • 3 tablespoons double cream
  • 1 piece preserved stem ginger
  • 3 tablespoons honey
  • 1 oz (25 g) cut mixed peel

Instructions
 

  • Sieve the cottage cheese into a bowl.
  • Lightly whip the cream and fold into the cheese.
  • Finely dice the ginger and stir into the mixture, then stir in the honey.
  • Chill the cottage cheese in the refrigerator. Serve garnished with cut mixed peel.
