  • 1/2 cup margarine
  • 1 lb all-purpose flour, sifted
  • Pinch salt
  • 1/2 cup water
  • #Filling#
  • 3 bananas
  • 2 tsps sugar
  • Pinch cinnamon
  • Few drops of lemon juice
  • 1 egg yolk, beaten

Instructions

  • Cut the margarine into the flour and salt. Using your fingers, incorporate the water gradually to form a ball. Wrap a damp cloth around the dough and leave it to rest in a cool place for 30 minutes.
  • Peel and crush the bananas with a fork. Add the sugar, cinnamon and lemon juice. Mix together well.
  • Roll out small pieces of dough on a lightly floured surface and cut into circles. Place a little of the banana filling on each round of dough. Fold into half-moon shapes and seal the edges first by pinching together with your fingers and then by decorating with a fork.
  • Continue until all the dough and filling have been used.
  • Brush the beaten egg yolk over the half-moon pastries. Pierce the pastries once to allow steam to escape during cooking. Cook in a moderate oven, 350°F, for approximately 20 minutes, until crisp and golden.
