Szechuan (Sichuan) Bang Bang Chicken | Chinese Snack Recipes
- 2 chicken breasts
- 1 medium cucumber
- 5 tbsps peanut butter
- 2 tsps sesame oil
- 1/2 tsp sugar
- 1/4 tsp salt
- 2 tsps stock
- 1/2 tsp chili sauce
- #This is a good dish to serve as an appetizer.# Simmer the chicken in a pan of water for 30 minutes. Remove the chicken breasts and cut them into 1/2-inch thick strips.
- Thinly slice the cucumber. Spread cucumber on a large serving platter. Pile the shredded chicken on top.
- Mix the peanut butter with the sesame oil, sugar, salt and stock. Pour the sauce evenly over the chicken.
