Ingredients
  

  • 2 liters of water
  • 1 big chicken
  • 4 carrots
  • 2 onions
  • 4 ribs celery
  • 1 parsnip
  • 1 turnip
  • 1 c parsley
  • Sea salt to taste
  • 5 black peppercorns

Instructions
 

  • Place all the ingredients in a pot with the water. Bring it to boil. Remove all the foam as it comes to the surface, reduce heat and cook over low heat for 2 hours.
  • Remove from heat and remove the chicken and the vegetables.
  • Refrigerate over night; the next day, remove the fat that has risen to the top. (Or eat “as is”!) You can add some thyme, rosemary and/or bay leaves (I take them from the tree in my garden) if preferred.
