#Simple, easy, and tasty. The dominating taste of sun-dried tomatoes and the spices in the dressing – what a great combo with the mellow taste of rice. I love the tart fruits tossed into rice or pasta salads. Choose unripe apricots, plums, peaches or mangoes. Serve this salad slightly warm accompanied by a big bowl of green salad – a gorgeous idea for a summer dinner around the table with family. And how about sipping a glass of chilled white wine with your dinner? Cheers!#
Make the dressing first. Whisk ingredients in a bowl and let rest for a quarter of an hour while preparing the rice.
Reconstitute dried tomatoes and chop to desired size.
Flake rice with a fork and add all other ingredients except fresh coriander or parsley.
Add the dressing and mix until well blended. Correct seasoning.
Sprinkle in the chopped up greens and mix once more.
