Pistachio is a nut with a small greenish kernel. The shell around the kernel cracks as the nut ripens. It is easy to shell pistachios only by pressing on the shell with fingers.

Pistachios can easily be skinned by blanching. Simply pour boiling water over nuts in a bowl. Let sit for a few minutes and then rinse under cool water and slip the skin off. 1/2 kilo / 1 lb of unshelled nuts will yield half the amount of shelled nuts. Pistachios are used widely in Mediterranean and Asian cuisines from savory dishes to desserts. Pistachios are a good source of potassium and magnesium. They are best used in moderation due to their high content of unsaturated fatty acids and high calorie content.
