Mediterranean Appetizers: Fonduta Recipe

Fonduta is a dish resembles fondue and the cheese we will use in dish is fontina. It is an Italian medium-fat cheese with a rich salty flavor, a little like Gruyere, which makes a good substitute. This delicious cheese dip needs only some warm ciabatta or focaccia, a herby salad and some robust red wine for a thoroughly enjoyable meal.

Ingredients
  

  • 9 oz (250 g) fontina cheese, diced
  • 8 fl oz (250 ml) cup milk
  • 1 tbsp (½ oz/15 g) butter
  • 2 eggs, lightly beaten
  • Ground black pepper

Instructions
 

  • Put the cheese in a bowl, pour over the milk and leave to soak for 2-3 hours.
  • Transfer to a double boiler or a heatproof bowl set over a pan of simmering water.
  • Add the butter and eggs and cook gently, stirring until the cheese has melted to a smooth sauce with the consistency of custard.
  • Remove from the heat and transfer to a serving dish. Grind over some pepper and serve immediately. #COOK’S TIP# Don’t overheat the sauce, or the eggs might curdle. A very gentle heat will produce a lovely smooth sauce.
