Cardamom is a member of the ginger family. It is one of the most ancient spices as well as one of the most expensive ones like saffron and vanilla. Cardamom has an intensely aromatic flavor. It is used in baked goods, fruit compotes, marinades and wines. Cardamom is the key ingredient in curry dishes. It is also used to flavor coffee. It is valued for its digestive properties and is also a breath freshener. Cardamom is sold either in small pods, which need to be crushed to remove the seeds, or as whole or ground seeds.
