  • 150 ml very best olive oil
  • 4 garlic cloves, peeled but whole
  • 1 small to medium dried chilli (to taste), finely chopped
  • 2 tablespoons finely chopped parsley
  • Freshly grated Parmesan cheese (optional), to serve
