- 16 caramel waffles
- ICE CREAM:
- 2½ cups (20 fl oz) cream
- 3 egg yolks
- 1⁄3 cup caster (superfine) sugar
- ¾ cup pureed strawberries
1 To make ice cream, place cream, egg yolks and sugar in a saucepan and stir over low heat for 5 minutes or until mixture coats the back of a spoon.
2 Allow mixture to cool. Add strawberries to cream mixture and place in an ice cream machine. Follow manufacturer’s instructions until ice cream is thick and frozen.
3 Place ice cream in freezer for 30 minutes or until it’s firm. Alternatively, pour mixture into a metal container and freeze for 1 hour.
4 Beat mixture to break up ice crystals and refreeze for 3 hours or until ice cream has set and is firm.
5 Spread ice cream over a wafer and sandwich together with another wafer. Refreeze or serve immediately.
