Low Fat Soups: Orange Consomme Recipe

A deliciously refreshing starter to any meal. The preparation takes hardly any time at all and, if you want to speed up the chilling process, cool and cover the consomme, then place it in the freezer until the surface is covered with a thin layer of ice.

INGREDIENTS

  • 1 x 475 g (15 oz) can beef consomme
  • Juice of 3 oranges
  • 2 cloves
  • Cayenne pepper, to taste
  • 1 orange, sliced thinly, to garnish

INSTRUCTIONS

1 Pour the consomme into a pan. Add the orange juice to the pan with the cloves and cayenne to taste. Bring the mixture to the boil, then remove the cloves, using a slotted spoon. Tip the contents of the pan into a bowl and set aside until cool.

2 When the orange consomme is cool, cover the surface closely and chill for 3—4 hours in the refrigerator. Alternatively freeze the mixture for about 30 minutes, until the surface is covered with a thin layer of ice.

3 Serve in chilled bowls, garnishing each portion with an orange slice.
