Aromatic Vinegars and Oils: Sherry and Orange Juice Marinade

You have seen different flavored vinegars that are now available in the supermarkets. But since I always prefer homemade food, here is my advice: fill a few glass bottles with any good quality vinegar, and add a different herb, spice or vegetable to each one. One might be onion, one garlic, one Fines herbs, oregano, etc; let them mature for two weeks. The most common additions to flavor vinegars are: tarragon, rosemary, raspberry and garlic. To flavor oils: garlic, red chili pepper, Mediterranean herbs (rosemary, thyme, tarragon, and marjoram), lemon.

INGREDIENTS

  • 1/2 cup dry sherry
  • 2 garlic cloves
  • 1 tbsp light soy sauce
  • Some water
  • 1/2 tbsp honey
  • Orange juice
